Prawn Fried Rice (Chom Chien Tom)


3 tablespoons oil
2 cloves garlic, finely chopped
225 g (8 oz) prawns, peeled and deveined
1 small onion, peeled and cut into 8 sections
1 ripe tomato, cut into 8 sections
2 large eggs, lightly beaten
550 g (4 cups) cooked long-grain rice. Use cold rice.
1 spring onion (scallion), chopped
1 spring fresh coriander (cilantro), coarsely chopped


Seasoning :
1 tablespoon Maggi sauce
1 tablespoon fish sauce
1/2 teaspoon salt
1/4 teaspoon freshly ground white pepper

Serves 2 - 3
